Gluten-Free, Non-GMO, Edamame Spaghetti

I found this Edamame Spaghetti at Trader Joe's and thought I would give it a try.

Wow! It was extremely tasty and super easy and fast to make!

  • 1 8 oz. Package of Organic Edamame Spaghetti Explore Cuisine
  • 3 TBS Olive oil
  • 3 cloves Fresh Garlic chopped
  • 1 TBS olive oil or coconut oil
  • 1 small head broccoli flowerettes
  • 1 carrot sliced
  • 1 small zucchini sliced
  • 1 small yellow squash sliced
  • 1 small sweet onion sliced
  • Grated pecorino romano cheese


  1. Heat the 1 TBS olive oil in cast iron skillet

  2. Add onion and saute for a couple of minutes-stirring

  3. Add remaining veggies (you can cover on lower heat for a couple of minutes to cook a little faster but be careful not to over cook) Remove lid and saute for a couple more minutes

  4. Stir in fresh garlic about 1 min. before turning veggies off

  5. At the same time boil water in a pot for the pasta

  6. Add pasta and boil for 3-5 minutes

  7. Heat remaining 3 TBS olive oil 

  8. Add the rest of the fresh garlic and saute about a min.

  9. Add cooked pasta and stir to coat with oil and mix with garlic

  10. Remove pasta from heat

  11. Place a serving on each plate of pasta and veggies

  12. Grate fresh Pecorino Romano cheese over both the pasta and the veggies
