Mashed Cauliflower

Ingredients

  • 1 Head Organic Cauliflower
  • 4 oz Cream cheese
  • 1 TBS Butter (organic if you can get it)
  • Pink Himalayan salt to taste
  • Freshly ground black pepper

Optional:

  • 1 handful Fresh chopped chives
  • 1/4 cup Freshly grated pecorino romano cheese

Instructions

  1. Cut cauliflower into pieces

  2. Put in steamer basket

  3. Fill a large pot with water up to the basket


  4. Turn on high and steam until cauliflower is fork tender

  5. Pull out the steamer basket and pour out the water

  6. Put the cauliflower back in the warm pot with the rest of the ingredients

  7. Blend with an emersion blender until mashed potato consistency
