Spicy Thai Curry Noodle Soup

This super tasty soup has lots of possibilities. You can add any protein or just leave it vegetarian.

Ingredients

  • 3 cloves fresh garlic chopped or minced
  • 2 TBS Fresh ginger chopped small
  • 2 TBS Red curry paste
  • 2 TBS Coconut oil
  • 4 Cups Chicken or vegetable stock or broth I like to use stock
  • 3 Cups Coconut milk
  • 7 Ounces Really thin rice noodles (dry or fresh)
  • topping Chopped cilantro
  • chopped scallions
  • chopped red chili peppers (remove seeds and be careful they can be super spicy)
  • chopped Meat, chicken, pork
  • whole Shrimp (tails removed)
  • Be creative and add some veggies of your choice!
  • Bean sprouts (if desired)

Instructions

  1. Combine the garlic, ginger and curry paste in a small food processor (or mince and mash together in a small bowl)

  2. Add coconut oil and combine well

  3. Heat the paste in a large pot for just a couple of minutes (do not burn)

  4. Add chicken stock/broth

  5. Add coconut milk and bring to a boil

  6. Season with salt and freshly ground black pepper to taste

  7. You can pour the hot broth over fresh noodles (or dry noodles) in a bowl and wait a couple of minutes for them to cook or you can dip the noodles into a separate pot for about 5 seconds if they are fresh or for a minute or so if they are dry and then put them in a bowl and top with broth
