Sally’s Famous Apple Crumb Pie

Ingredients

Crust

  • 1 cup King Arthur Flour organic all-purpose
  • 1/4 tsp. salt
  • 1/2 cup chilled butter (or shortening)
  • 1-3 Tbsp. ice water (you'll need enough to hold it together but the less water the flakier the crust)

Apple filling

  • 8 cups Apples (pared, cored, and thinly sliced) 1) Paula reds or 2) Cortlands or 3) MacIntosh
  • 3/4 cup Granulated sugar
  • 1/4 cup King Arthur organic all-purpose flour
  • up to 1 tsp. cinnamon
  • up to 1/4 tsp. nutmeg (I leave this out but you can add according to taste)

Crumb Topping

  • 1 cup King Arthur organic all-purpose flour
  • 1 stick (1/2 cup) Butter (chilled)
  • 1/2 cup Light brown sugar

Instructions

Crust

  1. Crust: mix the salt and flour together

  2. cut up the stick of chilled butter into small pieces and add to flour

  3. Blend together using a pastry blender

  4. Start adding ice water one Tbsp. at a time until the dough starts holding together

  5. Roll out on wooden cutting board or on granite counter until it is large enough to cover the bottom of a pie pan and up the sides with enough to make an edge at the top of the sides.

Apple filling

  1. Mix apples, sugar, and cinnamon together (let rest a few minutes)

  2. Put apple filling into pie crust

Crumb Topping

  1. Mix topping ingredients together (it will be lumpy)

  2. Sprinkle over top of the apple filling

Bake

  1. Pre-heat oven to 350°

  2. Put pie on rack in middle of oven placing a baking sheet on rack underneath to catch the drips

  3. Bake for approximately 1 hour (*hint: it is done when it is dripping)
