I found this Edamame Spaghetti at Trader Joe's and thought I would give it a try.
Wow! It was extremely tasty and super easy and fast to make!
Heat the 1 TBS olive oil in cast iron skillet
Add onion and saute for a couple of minutes-stirring
Add remaining veggies (you can cover on lower heat for a couple of minutes to cook a little faster but be careful not to over cook) Remove lid and saute for a couple more minutes
Stir in fresh garlic about 1 min. before turning veggies off
At the same time boil water in a pot for the pasta
Add pasta and boil for 3-5 minutes
Heat remaining 3 TBS olive oil
Add the rest of the fresh garlic and saute about a min.
Add cooked pasta and stir to coat with oil and mix with garlic
Remove pasta from heat
Place a serving on each plate of pasta and veggies
Grate fresh Pecorino Romano cheese over both the pasta and the veggies
