Greek Salad with Homemade Greek Dressing

Ingredients

Fresh Vegetables-You can add or eliminate veggies as you like

  • Butter lettuce, Romain or lettuce of your choice
  • Tomato
  • English cucumber
  • Artichoke hearts (packed in water or pickled)
  • Celery
  • Avocado
  • Pitted Kalamata olives
  • Fresh Feta Cheese

Greek Salad Dressing

  • 6 TBS Extra virgin olive oil
  • 1/4 cup Red wine vinegar
  • 1 TBS Lemon juice
  • 1 clove garlic minced or pressed
  • 1 tsp. Dijon mustard
  • 1 TBS Fresh oregano chopped (fresh is best but if you just don't have it you can use dried in a pinch)
  • Salt & freshly ground pepper to taste

Instructions

  1. You can put all of the dressing ingredients in a small jar and just shake the dickens out of it before you pour it on the salad!
