This super tasty soup has lots of possibilities. You can add any protein or just leave it vegetarian.
Combine the garlic, ginger and curry paste in a small food processor (or mince and mash together in a small bowl)
Add coconut oil and combine well
Heat the paste in a large pot for just a couple of minutes (do not burn)
Add chicken stock/broth
Add coconut milk and bring to a boil
Season with salt and freshly ground black pepper to taste
You can pour the hot broth over fresh noodles (or dry noodles) in a bowl and wait a couple of minutes for them to cook or you can dip the noodles into a separate pot for about 5 seconds if they are fresh or for a minute or so if they are dry and then put them in a bowl and top with broth
