Instant Pot Pulled Chicken Chipotle Adobo

Ingredients
- 3 organic boneless, skinless chicken breasts you can mix and match between breasts and thighs or just use either one
- 3 organic boneless, skinless chicken thighs
- 1 tsp chili powder
- 1 dash cayenne pepper optional
- 1 tsp dried oregano
- 1 tsp cumin
- sprinkle pink Himalayan salt
- to taste freshly ground black pepper
- 1 yellow or sweet onion quartered
- 5 cloves fresh garlic minced
- 1 to 2 chipotle peppers (in a dobo)
- 1 TBS adobo sauce
- 8 oz. salsa verde I used Trader Joe's
- 1/4 cup organic chicken stock (or broth)
- 1/8 cup each fresh lime juice & fresh orange juice
- rind of 1/2 an orange
- handful chopped fresh cilantro
- 1 14 oz. can Black beans drained and rinsed
Sauce-Blend or put in food processor until smooth
- 1 1/2 chipotle peppers (in adobo)
- 1 TBS adobo sauce
- 1 TBS organic whole milk
Instructions

Turn the Instant Pot on set to saute. Heat the olive oil in the Instant Pot.

Sprinkle all of the spices onto a plate and mix them together (the amount of each depends on your tolerance for spicy)

Coat chicken in the spice mix

Saute the chicken until browned on each side then remove from pot

Add onions to pot and saute for a couple of minutes

Add garlic and saute just a couple of more mins. (Not too long so the garlic doesn’t burn)

Add back the chicken

Add remaining ingredients and close the lid with the valve on steaming (not release)

Set to cook on poultry setting with high steam for 9 mins.

Open valve and let steam out then add black beans and set to warm for 5 or 10 minutes to make sure the beans are heated through

Serve in tacos, tostados, nachos, etc. with all the usual toppings, avocado, shredded cheddar, fresh chopped jalapenos, diced tomatoes, chopped or shredded lettuce or cabbage, fresh chopped cilantro
